Background:
Looking for something sweet, but don't have much time to bake? Then, this is the perfect dessert! I made these brownie cookie cups for a Super Bowl party and they were gone before I could say Go Rams/Pats!
Cookie Ingredients:
5 tbsps of butter, unsalted
¼ cup of light brown sugar
1 large egg yolk
½ cup of flour (all purpose)
Pinch of salt
¼ cup of mini chocolate chips (dark or white)
Brownie Ingredients:
6 tbsps of melted butter, unsalted
½ cup of sugar
¼ cup of cocoa powder (Hersey’s is a good choice)
1 large egg
¼ tsp of butter vanilla flavor (or vanilla extract)
(Optional) cracked Himalayan salt to sprinkle on top
Instructions:
(Total cook time: 30 minutes)
Preheat oven to 325°F. Lightly grease mini cupcake pan. Crisco or spray grease will work.
Cookie crust…(2a) In a medium bowl, mix together butter and sugar until fluffy; (2b) Mix in egg yolk until smooth; (2c) Add flour and salt; mix until combined; (2d) Stir in chocolate chips (2e) Chill for about 5-10 minutes.
Brownie batter…(3a) In a medium bowl, whisk together melted butter, sugar and cocoa powder until smooth; (3b) Stir in egg and vanilla flavor; (3c) Stir in flour until batter is smooth.
Divide cookie mixture into 10 portions and press into cupcake pan holes (to form crust shells).
Spoon brownie batter into each crust shell.
Bake for 10 minutes.
Remove from oven and let cool in pan for 10-15 minutes.
Remove from pan and sprinkle the top with sea salt.
Storage:
You won’t need to :-)
